Ingredients

Fajita Seasoning Mix

  • 2 cloves Garlic minced
  • 1 tsp Oregano
  • 1 tsp Paprika
  • 1 tsp Cumin
  • 1 1/2 tbsp Chili Powder
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 3 tbsp Olive Oil

Fajitas

  • 1 pound Chicken Breast sliced into strips
  • 1 Green Bell Pepper sliced into strips
  • 1 Orange Bell Pepper sliced into strips
  • 1 Red Bell Pepper sliced into strips
  • 1 Red Onion sliced into strips
  • 8 Flour Tortillas
  • 1 Lime juiced

Optional

  • 3 tbsp Cilantro chopped

Instructions

  1. Preheat the oven to 400 degrees F.

  2. Grab a sheet pan, lay down some parchment paper, and give it a little spray of oil— this will be perfect for easy cleanup!

  3. In a medium-sized bowl, combine minced garlic, oregano, paprika, cumin, chili powder, salt, pepper and oil. Mix until well combined.

  4. Add the sliced chicken, peppers, and onions into the bowl of fajita seasoning mix. Toss with the fajita seasoning mix until coated.

  5. Spread the coated chicken, peppers, and onions onto the prepared sheet pan. Place the sheet pan into the oven and bake for about 10 minutes and then stir. Continue to bake for another 10 to 15 minutes. During the last 5 minutes of cooking, wrap up your flour tortillas in aluminum foil and place them into the oven, to warm. The chicken is cooked when the thermometer reads at least 165 degrees F.

  6. Once the chicken and vegetables have been cooked, remove the sheet pan from the oven. Drizzle over the lime juice and also sprinkle on some chopped cilantro and stir again.

  7. Serve chicken fajitas in warmed flour tortillas topped with your favorite toppings.

  • You may use your favorite variety of bell peppers (red, yellow, orange or green) – it’s up to you!
  • Don’t have red onions? No worries!  Yellow or white onions work great too!
