Ingredients

  • Sandwich Sauce
  • 1/3 cup mayonnaise

  • Juice of 1/2 lime

  • 1 tsp Jamaican Jerk Rub

  • Pineapple Pico de Gallo
  • 1 tomato

  • 1/4 cup pineapple chopped, fresh or canned

  • 1/2 jalapeno pepper, seeded and chopped fine

  • 2 tbsp. cilantro, fresh and chopped

  • 1/2 onion, diced

  • juice from 1/2 of a lime

  • 1/4 tsp salt

  • Chicken and Cooking Liquid
  • 3 tbsp. soy sauce

  • 1/2 onion, diced

  • 1 tbsp. apple cider vinegar

  • 1 tbsp. Jamaican Jerk Rub

  • 2 tsp brown sugar

  • 1 tbsp. vegetable oil

  • 1 lb. boneless chicken breasts, cut into strips

  • Sandwich
  • 6 lettuce leaves

  • 6 sandwich rolls

Directions

  • Start off by making your marinade and cooking liquid so that your chicken can marinade while you are preparing the rest of your sandwich ingredients. Add to a large bowl, soy sauce, onion, apple cider vinegar, Jamaican Jerk Rub, brown sugar, and vegetable oil. Mix everything up well and then add in the chicken. Cover and place in fridge to marinate at least 10 minutes or until ready to cook.
  • First start off with making the sandwich sauce. Add to a small bowl the mayonnaise and lime juice. Mix together. Then add in the Jamaican Rub and mix well. Cover and store in fridge to chill, until ready to use.
  • Next for the Pico, add to a large bowl the tomatoes, pineapples, jalapenos, cilantro, onions and lime juice. Mix well and then add in the salt. Mix again. Set aside until ready to use.
  • To start on the chicken, prepare your cooking vessel by heating it up. If using an indoor grill, oil the grill plates. Once the grill is heated up add the chicken on an even layer without over lapping. Cook the chicken for 8 to 10 minutes until done, flipping once half way through cooking. Move chicken to a platter once fully cooked.
  • Now to assemble your sandwich, spread some of the sauce on each side of the sandwich buns. Next layer some lettuce on the buns. Add on a few pieces of the cooked chicken. Top the chicken with some of the Pico. Last place on the top bun to complete your Jamaican Jerk Chicken Sandwich. You can serve with your choice of side and enjoy!
