Berry Bruschetta

I am sure that you have heard of and maybe even tasted what is more of the traditional bruschetta. Both of these variations of bruschetta use toasted bread as the base of the dish. The twist of berry bruschetta is that it exchanges the tomatoes and herbs for berries and cream.

This berry bruschetta is sweet, bursting with fresh berries and creamy cream cheese. Also, soon it will be Easter and Spring is coming, this is a very easy dish to prepare. Gather your kids together into the kitchen, divide up the tasks and create this sweet twist on a traditional dish.

Berry Bruschetta

A classic appetizer turned into a sweet treat.  Toasted french bread slices, with sweetened cream cheese and fresh sweet berries.

  • 1 loaf French bread
  • 3 tbsp olive oil
  • 3 tsp sugar
  • 8 oz cream cheese
  • 8 tsp powdered sugar, divided (confectioners' sugar)
  • 1 tsp vanilla extract
  • 1 cup strawberries
  • 1 cup blackberries
  1. Slice french bread into 1/2 inch thick slices.

  2. Brush olive oil on bread slices and then sprinkle sugar over the tops.  Arrange sliced bread onto a baking sheet that is ungreased.

  3. Set oven to broil.  Place pan in oven at least 3 inches to 4 inches away from the heat and toast bread for 1 to 2 minutes or until bread is lightly browned.

  4. Place room temperature cream cheese into a small bowl.  Add in vanilla extract and 4 teaspoons of powdered sugar and mix well.  Spread toasted bread with sweetened cream cheese.

  5. Place berries on top of the toasted bread.  Sprinkle bread slices with powdered sugar.

Berries can be sliced or left whole, if desired.
